Oat and raisin cookies

Recipe

160g dark brown sugar

160 g golden caster sugar

270 g unsalted butter

2 eggs

1/4 tsp vanilla extract

1 tsp cinammon

1 tsp bicarbonate of soda

380g plain flour

110g g oats (rolled)

220 g raisins

Preheat oven to 180C

Mix up your butter and sugar using an electric mixer until it’s fluffy. Add in each egg and beat between. Add vanilla. Beat again.
Stir in your flour, salt and cinnamon.
Now add your oats and raisins.

You’ll need a few baking trays (grease and line them with baking parchment)

I like my cookies small , you can make them to whatever size you like.

Bake for 10-15 mins (keep a watch out!) until they get that nice golden look 🙂

These are my ultimate
cookies. And because they have oats and raisins – they are good for you right!? These make great “new mom” gifts as oats are great for lactation.
