Mini Victoria Sponges


These are one of my “signature bakes” – I make them for all occasions and as nearly everyone likes a slice of good old Victoria sponge, these bite size versions always go down well.image

The recipe is just a simple Victoria sponge mix:

6oz butter

6oz caster sugar

1 tsp vanilla essence

3 eggs

6oz self raising flour

For the filling I use buttercream and jam- but you can use anything!

Icing sugar for dusting

Simply beat the butter and sugar for 5 full minutes with an electric whisk. Add the vanilla and eggs (one by one, beating between additions) Then use a big spoon and fold in the flour.

I use silicone cupcake cases, in a muffin tin. Bake then for 15-20 mins at approx 180C.

Then when they are cool, slice in half and add your filling. Dust with icing sugar. Et voila !
