kefir & kale popsicles – that my kids love!


The hot weather is upon us and my kids have been begging me for popsicles. I’m not a huge fan of all the sugar and other stuff that’s thrown into most grocery-store versions, plus, I can make my own for a fraction of the cost, so here’s my latest “winner, winner, chicken dinner” (as Jeremiah says). These really are a win-win because they’re refreshing, delicious and good for you! All you need is a popsicle mold and a few ingredients. You can add any frozen fruit you like, but I find this combo works well.

INGREDIENTS:

(Approximate measurements)

3/4 C Plain Kefir

1/4 C Natural Yoghurt

1 C Berry/Cherry Frozen fruit mix (strawberries, cherries, raspberries, blackberries and  blueberries)

1 C chopped kale

Splash of Orange Juice

1 T Chia Seeds

Adjust measurements for the amount of popsicle molds you’re filling, but generally you want a thick smoothie consistency.

Blend well and then spoon into molds. Freeze for a few hours. Enjoy!
