My son is 4 tomorrow ! He had a birthday party yesterday and I decided to bake him a chocolate cake. Then him and his cousin decorated it. I think it looks amazing – and seeing as there is only one slice remaining .. I think it’s safe to say it tastes pretty awesome too!
Ingredients
350g self raising flour
4 tbsp cocoa powder
2 tsp bicarbonate of soda
300g caster sugar
4 eggs beaten
300ml milk
300ml sunflower oil
4 tbsp golden syrup
Frosting
80g unsalted butter
200g icing sugar
3tbsp cocoa powder
3 tbsp milk
Blackcurrant jam
And then whatever chocolate candy you fancy!
Oven 180C
The method for this cake is really straight forward I am nervous to call it fool proof, but really it’s such an easy cake to make and it always tastes so so good.
Place your dry ingredients into a large bowl and whisk them (rather than sieving)
Make a well in the centre and add the wet ingredients, then beat until it’s smooth.
You’ll need four 20cm round cake pans, grease and line them and then pour the mix between them evenly. Bake for 25-30 mins (until your skewer comes out clean) Turn onto a wire rack to cool.
For the frosting – put the icing sugar and cocoa into a bowl and lightly whisk. Then add the milk and gently start to combine it, add the butter and gently mix it to begin with – then beat it fully for a few minutes – by taking it slow to start you make less mess!
To assemble your creation, once the cakes are all cool and removed from tins (don’t forget to take off the baking paper…!) – then layer them up – sponge/jam/sponge/frosting/sponge/jam/sponge
Then the rest of the frosting coats the top and sides.
Decorate with your chosen candy – we used lots of sprinkels and giant buttons!
